Pumpkin Pie! No Cans Allowed!

I *love* pumpkin pie. It might be my favourite dessert ever (well, next to Christmas Custard of course). Every year I look forward to pumpkin season - pumpkin pie, pumpkin seeds and starbucks pumpkin frappacinos. YUM!

So, the other day I started harassing Joe: "honey, lets make a pumpkin pie! Please! It's so yummy and easy!" he said yes, but there was NO WAY he would make a pumpkin pie out of a can. No canned pumpkin for that man!

We went to the grocery store to get the ingredients:

A little cute Pumpkin
Sweetened Condensed Milk
Water (we used tap! ha!)
Nutmeg
Cinamininimin
Cloves
& I think that's it.
(we did cheat and used a pre-made pie crust that Joe already had in his freezer. What an ironic guy. He refuses to make pie out pumpkin pie filling out a can, but uses a ready made freezer crust!)


The first thing Joe did was halve the pumpkin. Then he & I (this is probably the only spot where I helped out) pulled out all the squishy stuff, and of course we saved the seeds and baked them! yum! Next, Joe baked the pumpkin until it was soft and a little mushy. He cut it into chunks and pureed it into a delicious raw pumpkin goo. He then added the milk, water, spices and mixed it all up. Oh my goodness, it smelled SO good while it was baking! Like a delicious pumpkin pie!

We also made home made whipped cream with Heavy Whipping cream and sugar. The recipe also calls for vanilla but we didn't have any. Oops. No worries, we used butter extract instead (just a tiny little bit! That stuff is strong!). And wow. It turned out so well! YUM!
